Mouth Watering Huevos Rancheros

My husband would eat these Huevos Rancheros every single day of his life if I let him.  Seriously!  I owe this recipe to his wonderful mother who taught it to me after we first got married. Its very simple and customizable depending on what you have on hand at the time.  Don’t like your eggs “runny”, well I’ll warn you…you might change your mind after eating them made this way. If you don’t cross over, then  just lightly scramble your eggs and proceed as directed.

What you need:

Corn or Flour Tortillas (we use both, but corn is pictured above)

Cheese- my mother in law uses mozzarella, but use just use whatever’s handy, although I think Mozzarella tastes better!

Oil for cooking, use whatever you prefer- we use Extra Virgin Olive Oil

Eggs- I run out to the coop and steal some from my feathered girlies, but you can get yours from the store 😉

Hot Sauce if desired- or Salsa – My mother in law uses Sriracha Sauce, which is delicious.  We have been using Valentina Sauce recently and ADORE It, but when I have fresh tomatoes around I really prefer a fresh Homemade Salsa.  Experiment a bit till you find one you like.

What you do:

Get your pan nice and hot!  I like using a cast iron pan, because they are basically non-stick, durable and clean up nicely.  This is the one I like to use in my kitchen, since they are made in America and a great product. I haven’t used a different pan in months honestly.  I really want to get the 12 inch one next!

Pour your oil into your pan and once its hot, toss in the first tortilla, wait till it bubbles up a LOT not just a little and then flip it.  Once its nice and browned, put it on the plate and sprinkle cheese on top (and hot sauce if you want- although I usually just put this on top). Repeat the process with another tortilla, and keep going until you have as many layers as you want.  For me, I do 2 layers, but for my husband I do 3.

Now simply cook some eggs “over easy” and carefully place on top of the layered tortillas and THEN break the yolk.  Add the salsa/hot sauce of your choice (I highly recommend the Valentina Sauce- I bought a huge bottle at Aldi for like 1.99) and ENJOY!
